Let me (Brandon) just start by saying that this whiskey is not for everyone. Selfishly, I must say, that this whiskey is largely for me. But - also for a lot of you. Just not all of you. But, more of you than you would think. A backstory:

I have been obsessed with this cask for the past month. In re-arranging our barrels for our very beautiful new barrel room, this one ended up on the top of the stack rather than the bottom. And, I decided it was time to pull a sample. And - I sat down on the couch in our barrel room, and I drank the whole sample. At, like, 10am. I do not condone this. I do not generally do this. It was just really delicious, and I had to sit and think on it. So, in the evenings, I would pull a sample again to see if it was really that good. And every time, it was. And earlier this week, I decided it had to be bottled the same way that I tasted the samples - straight from the barrel, unfiltered, at cask strength. I am smitten with this whiskey.

This whiskey was made with Baird's Heavily Peated Malt straight out of Scotland. It was fermented with a saison yeast that contributed GORGEOUS esters and baking spice notes. It then went into an ex-bourbon barrel that previously held Four Roses (I will post which 4roses recipe was in the barrel for all you whiskey weirdos out there) on November 4th of 2018.

Now. The tasting notes. This whiskey is so incredibly sweet. Delightfully sweet. Fruity and deliciously sweet. Then chased with a dry acrid peat smoke. These two conflicting flavors create incredible balance. All of the things you peat lovers love in peat is here in a big way - the creosote, the campfire, the smoke. And yes - THE BANDAID. But - then the sweetness. And the nose! So - over the years and years and years in a barrel, the smokiness tends to dissipate. Well - this whiskey has only had two years for those phenols to dissipate. This is an opportunity to experience a single malt's phenols in its earliest years.

Now. Some notes for the ageists, the purists, the bourbonites, and the skeptics.

First - to the ageists: DON'T BUY. It won't give you what you look forward to in a whiskey. There will be no street cred or bragging rights amongst your fellow whiskey buddies. Skip this whiskey, please.

For the purists: BUY THIS WHISKEY. This is an excellent take on a traditionally made single malt whiskey with minimal liberties taken - the saison yeast and an aging that does not meet Scotland's rule of three years in used cooperage. But, you will love that it is bottled cask strength, you will love the nose, and it will remind you of an Octomore, a Machir Bay, or even an Ardbeg Very Young for those who are lucky enough to have every tried it. Everything I learned at Kilchoman is in this bottle. You will appreciate the legs and the pale straw color. You will also likely doubt the 55% ABV. It is.

For the bourbonites: CONSIDER BUYING THIS WHISKEY. And for fun, get a bottle of Four Roses Small Batch and try them side by side. Appreciate the quality of 4roses barrels and the lovely sweetness that lends itself so well to this whiskey. Keep it around as a party trick for all of your friends who think they hate smokey whiskey. They'll like this. Maybe not everyday, but on a cold winter night, yes. DON'T JUDGE THIS WHISKEY BY ITS COLOR. The bourbon you love so much that was in the barrel before this whiskey went in sucked up all of the color. Ten years from now, this whiskey would still be the same color.

FOR EVERYONE ELSE:

If you love peated whiskey, this is an exciting expression and you will be pleased. If you have never had peated whiskey, this is a fine introduction because it is so sweet and surprisingly approachable. This whiskey will make a fine addition to your home bar, a fine bottle around the campfire, a fine pour after Thanksgiving dinner with pumpkin pie or (my word!) pecan pie, an excellent choice with Thanksgiving dinner if you got one of those addicting smoked Turkey birds from Jerry's Meats, and obviously an excellent winter fire companion. There is only a tiny bit of it, and that makes us (everyone at Amalga) sad. We wish we could share it with everyone. But, this is also an excellent whiskey to share, because it is such a unique experience wether you love it or hate it. And. You will either love it or hate it.
